It's not Thanksgiving with out Pumpkin Pie

It's that time of year again to sit down and stuff your face with turkey, mashed potatoes, gravy, stuffing, rolls and to top it off pumpkin pie and whipped cream. We had a great Thanksgiving day full of food and family. It is Jeremy and my first Thanksgiving at our home. We have ate Thanksgiving dinner at our friends and families homes for 8 years now. I guess it was about time that we have one of our own. We enjoyed spending it with Mom and Dad Noble.

We started off the day watching our family eat dinner in Rexburg. Since we couldn't we with them we did the next best thing...we watched them with my new web cam. Thanks to Skype we were able to enjoy Thanksgiving with all of our family. We love you guys and miss you. Wish we could have been with you in person but we did the next best thing.

It's Pumpkin time!

Maggie and I last week cleaned and baked a pumpkin. She wanted to make pumpkin pie. I wanted to make a pumpkin roll. They both turned out great. And weren't that hard to make. Happy Thanksgiving!

Here are the recipes for Pumpkin pie and Pumpkin roll.


Libby's Pumpkin Pie Recipe
Estimated Times:Preparation - 15 min Cooking - 55 min Cooling Time - 2 hrs cooling Yields - 8 servings
Ingredients:
3/4 cup granulated sugar (my mom told me to use brown sugar)
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves (I didn't add all the cloves)

one pinch nutmeg
2 large eggs
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)

Directions:MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.POUR into pie shell.

BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.


Libby's Pumpkin Roll
LIBBY'S® Pumpkin Roll Estimated Times: Preparation - 45 min Cooking - 13 min Cooling Time - 1 hrs refrigerating Yields - 10 Dazzle family and friends with Libby's® Pumpkin Roll; moist and creamy, with a tantalizing aroma and beautiful presentation.
Ingredients:
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup
LIBBY'S® 100% Pure Pumpkin
1 cup walnuts, chopped (optional)
1 pkg. (8 oz.) cream cheese, at room temperature
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
Powdered sugar (optional for decoration)
Directions:FOR CAKE:PREHEAT oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar. COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
FOR FILLING:BEAT cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
COOKING TIP:Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.



An eventful weekend

We had a very eventful and busy weekend. We started out doing housework. Jeremy blew the leaves and gathered them up while I got myself and the kids ready. Then we went to get my driver's license renewed because the bank informed me that it was expired. OOPS! Then we ran to Costco for the weekly Costco groceries. Then to Fred Meyer to look at a coat for Maggie and grab a few more groceries. We ended the night going to Madagascar 2. We promised Maggie quite a few weeks ago we would take her. She had a blast. She loved the movie and busted a move in to " I like to move it move it" when the movie was over. It was well worth the money to see the look on her face after the movie. It was a special treat for her. Jeremy and I also enjoyed the movie. We especially like the new hippo Moto Moto. He was hilarious. Jeremy keeps quoting the movie. His favorite lines are; "Well I promise the answer will always be yes unless no is required", "Your are the most plumpinest girl I have ever met","Girl your Chunky", "My gosh girl your huge". I posted a video of Moto Moto. It is hilarious. We had a great weekend!

A Day and Night Out

Today was a eventful day. I started the day by going visiting teaching this morning. It was nice to get out of the house and visit with adults. Then the kids and I went to a church food buying group. I am so excited to finally get my food storage going. We are starting with the basics. Then Amy and I went to Linens and Things to see if they had anything left since they are going out of business. They had lots of toilet seat covers 3/$1.00 if anyone needs some. I ended the night with a dinner with Amy at the Issaquah Brew house for my birthday treat from her. My dinner was great. I ate a cheese burger and fries. Amy's food wasn't that good. I guess we need training on what to buy for dinner at a brewery. We ended up going to Cold Stone for dessert (I got "Our Strawberry Blonde"-yummo).

Today was the first time that I got out of the house and left both kids with Jeremy. It was definitely a nice break which I really needed. I am glad I have such a great husband that will let me get away for a few hours. He had both kids in the pajamas and they were reading books in the bedroom. Boyd wouldn't look at me for an hour or so after I got home. I think that he was mad that I left him. I gave him a few extra kisses to make up for it.

Maggie has a cast

Maggie can tell you the whole story. I had her tell me and I wrote it down for everyone to read.

Here is the story of how Maggie fractured her ankle in Maggie's own words:
"When I went to grandpa Scouller's house. We stayed at a hotel. And we went swimming. I jumped in the pool and throwed the ball at mom. I came up and I was screaming and crying. I broke my ankle. Daddy looked at it. Mommy almost touched it. Daddy and Mom took me to the doctor. We got a picture took inside (her leg, an x-ray). We got my cast on. I wanted a purple cast and if they didn't have purple I wanted pink. (She told Jeremy and I at the doctors office that she wanted a purple cast and if they didn't have purple she wanted purple). There was white stuff on my ankle. Then there was white and purple stuff (looked like tape). It is good now."
It has almost been a week from when Maggie got her cast on. It has been an interesting week. Maggie has been alright but you can definitely tell that her foot has been bothering her. She has been very emotional but strong at the same time. She never complains about her foot hurting but we can tell that it bothers her when she starts whining and cries for no apparent reason. Thank goodness for Children's Motrin and Movies.

We have been trying to spend some special time with Maggie. She loves us to read to her. Jeremy and I both spent at least an hour reading to her yesterday. We mostly read Dora. She had a blast.

Boyd is getting so BIG

Jeremy and I both noticed how big Boyd is getting. He is now 5 months old and growing up so fast. Here is a list of some of the things he has been doing:

  • Babbles a lot and looks at you like he is trying to say something
  • Thinks his sister is hilarious and laughs and laughs at her
  • Got his first tooth
  • Loves his toys. Ducky and Froggy are his new best friends
  • Can stand and play in his exersaucer
  • Has found his feet and grabs them all day long
  • Loves to spit and make noises
  • Will chew when we are eating food around him
  • Will fall asleep by himself in his crib for naps

You forget how fast time goes by. I hope that everyone takes a minute to be thankful for their family and journal about all these precious memories. Before we know it Maggie and Boyd will be grown and we will be reminiscing of old times. I look forward to those days too.
