Eclair Pudding

I made this dessert from our ward cook book. Thanks Carrie for submitting the recipe it is so good and super easy to make. Everyone should try this!



Éclair Pudding Carrie Reckling
1 large pkg of Instant Jello Pudding (vanilla)
1 large pkg of instant Jello Pudding (chocolate)
1 medium sized container of Cool Whip
1 16 oz. Pkg. Graham crackers
5 cups milk
Fudge Frosting (recipe below)
Place graham crackers in a single layer on the bottom of a 9x13 pan. Mix vanilla pudding with 2 1/2 cups of cold milk. Beat well, let stand for 5 minutes and stir in 1/2 container of cool whip. Spread over the top of the graham cracker layer. Place graham crackers in a single layer on top of the vanilla pudding layer. Mix chocolate pudding with 2 1/2 cups of cold milk. Beat well, let stand for 5 minutes and stir in 1/2 container of cool whip. Spread layer on top of the graham cracker layer. Top with a final layer of graham crackers. Cover with chocolate frosting. Cover tightly and refrigerate overnight or at least for 6 hours to soften the graham crackers. *This was my family’s favorite treat growing up. Anytime anyone had a birthday, this was the requested dessert. It sounds a little odd, but your kids will love it!
Fudge Frosting
1 cube butter
1/3 cup cocoa
1/3 cup milk
1 pound of powdered sugar
1 tsp. Vanilla
Melt butter over low heat. Stir in cocoa. Stir in milk. Remove from heat and add sugar. Beat well. Add vanilla, beat again.

Daddy gave Boyd his first sweet treat

Daddy decided to give Boyd his first treat, a taste of his Popsicle the other night. Boyd's reaction is quite hilarious. I love the pics.

Boyd has been enjoying all of his toys lately. He has taken over our house with his jumperoo, exersaucer, swing, and now he thinks he owns the floor. He is quite the active boy anymore. He will be crawling any day now and I will be in serious trouble then.

Three Day Weekend

My mom and Jessie came to visit over the three day weekend. Maggie was so excited. I didn't tell her Jessie was coming. She loves to have any of our family come visit. She of course, has to sleep with Jessie. They slept together in the back bedroom on the bunk beds. Maggie woke up with her hair looking like a "Rat's Nest". I would love anyone to volunteer to brush that out. My sister asked me the last time she tried to brush out Maggie's hair how I did it and why her head is still so sensitive. Maggie still screams, cries, and gets really mad at me every time I try and brush her hair. Sorry kid. But I still love the boings.
She had a great time playing with Jessie. They stayed out of our hair long enough for my mom to help me but away all my Christmas stuff, make dinner, and do a few choirs.
Maggie insisted that we get out her swimming dog. We broke it out and it swam in our small bath tub with Maggie and Jessie. They finished the day by playing Yahtzee with Bree (Prince's sister) and acting like goofballs.

Jessie got a Yahtzee. She rolled five of the same number. If you look closely her front right tooth is finally in. It has been missing since she was two.

Jeremy's New Toy

Jeremy got a New Toy. He bought himself a boat. It is a 1993 Four Winns. It is really good condition. There are only a few things we will have to fix.
You won't have to guess where we will be this summer. But in case you tried to guess...we will be cruizin Lake Sammamish.



Jeremy could only wait a few days before he decided that he couldn't wait until Spring to clean up the boat. He cleaned the boat inside and out on his extra day off. It looks much nicer now.

It's hard being a PRINCE!

This is Prince, the little boy I babysit. I have been watching him since he was three months old. I can't believe how time goes by. He is almost turning two-in March. We were trying to give him one nap a day and this is what happened. I was talking to Jeremy and my back was turned to Prince. The next thing I knew Prince had fallen asleep in his Ravioli's. Poor Little guy. I took of the tray, washed him up, and picked him up and he still stayed asleep. He took a good nap that day!


The neighbors came over to visit. Bekki Park has been my back up babysitter. Thank goodness! It has been so nice to be able to leave for vacations and not have to worry about Prince. Thanks Bekki. Taylor and Prince are great buddies. Taylor decided that she wanted to sit on Prince's lap. It was quite hilarious. I snapped a few pics.

My mom is being....

Maggie this evening was talking to her Grandma Noble on the phone. I was trying to tell her something and she obviously didn't want to hear it. She said to Grandma Noble, "My mom is just being obnoxious." This could have been the funniest thing I have heard in awhile. It was straight out of the mouth of her.... mother. Oops. I guess it could have been worse.

Chillin with Daddy

Daddy loves his babies. He is so sweet with his children. Boyd is at a fun stage and loves to play. Dad and Boyd had a great time the other night playing with each other. I had to take the opportunity to take some pics of them. It was so cute.
