Éclair Pudding Carrie Reckling
1 large pkg of Instant Jello Pudding (vanilla)
1 large pkg of instant Jello Pudding (chocolate)
1 medium sized container of Cool Whip
1 16 oz. Pkg. Graham crackers
5 cups milk
Fudge Frosting (recipe below)
Place graham crackers in a single layer on the bottom of a 9x13 pan. Mix vanilla pudding with 2 1/2 cups of cold milk. Beat well, let stand for 5 minutes and stir in 1/2 container of cool whip. Spread over the top of the graham cracker layer. Place graham crackers in a single layer on top of the vanilla pudding layer. Mix chocolate pudding with 2 1/2 cups of cold milk. Beat well, let stand for 5 minutes and stir in 1/2 container of cool whip. Spread layer on top of the graham cracker layer. Top with a final layer of graham crackers. Cover with chocolate frosting. Cover tightly and refrigerate overnight or at least for 6 hours to soften the graham crackers. *This was my family’s favorite treat growing up. Anytime anyone had a birthday, this was the requested dessert. It sounds a little odd, but your kids will love it!
Fudge Frosting
1 cube butter
1/3 cup cocoa
1/3 cup milk
1 pound of powdered sugar
1 tsp. Vanilla
Melt butter over low heat. Stir in cocoa. Stir in milk. Remove from heat and add sugar. Beat well. Add vanilla, beat again.

Oh my goodness! That looks so delicious!! I will have to try that out. :) Of course, since Jason doesn't really eat chocolate, I may be devouring the whole things myself. Thanks! Hope you guys are having a good week.
Holy Moly Posts! Where do I even begin. You went blog crazy I guess. Good thing though because you haven't had a new post for a few days. Glad you had fun with your mom and jessie. Where was jackson? I can't believe your mom didn't bring them both. Anyway, boyd is so dang cute. Looks like he has lots of fun entertaining himself with his fun toys. The jumperoo is AWESOME! So glad you finally got that out. Looks like everyone is just having so much fun and staying busy.
