A night at the races-Wenatchee Valley's Super Oval

We were able to go to the races this weekend while in Wenatchee. It was Haglund's Trophy night. Jim, my dad's buddy, is the owner. He gave us tickets to the races. We even got VIP parking. I was really excited because I haven't been to the races in such a long time. I used to go quite often when my Uncle Sandy raced.

Maggie and Boyd got to experience the races for the first time. Maggie was so excited. She looked up at my sister Jackie and said, "Auntie, I have never seen the cars in real life before. I have seen them on TV." She was so happy. We sat through a good hour and a half and then it was time to leave. It was a little on the loud side and I think Boyd had enough. Plus it was his bedtime. Jeremy stayed with my dad to finish off the race. We had a great time.

Our Sunday Dinner

I guess we couldn't get over the food fair. We decided to make homemade corn dogs and fries for dinner Sunday night. They were so much better than the food fair ones. I will post the recipe at the bottom of this post.

Oven Baked Corn Dogs

Ingredients
2 boxes corn muffin mix, 8 1/2 ounces each (recommended: Jiffy brand)
1 cup all-purpose flour
2 eggs
3/4 cup milk
1/2 stick butter, melted
1 tablespoon chili powder, eyeball it in your palm
2 teaspoons cumin, eyeball it
2 teaspoons cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot
(I used my own seasonings-Garlic, Johnny's seasoning salt, pepper)
8 jumbo pork or beef franks

Directions
Preheat oven to 425 degrees F. We deep fried ours!!
In a shallow dish, combine muffin mix with flour, then stir in eggs, milk and melted butter. Season the mix with chili powder, cumin, cayenne and scallions. The batter will be a thick, sticky biscuit dough. Place a hot dog in the bowl of batter and swoosh it around to coat it. Remove coated dog to a nonstick cookie sheet and use your fingers to spread batter on any exposed dog spots. Don't coat it too thick, just shy of 1/2-inch should do the trick. If it's too thick it will just slide off the dog while it's baking, leaving the dog exposed. If that happens don't sweat it, they will still taste great. Repeat until all 8 are coated. Bake 12 to 15 minutes or until evenly deep brown all over.

The weekend started with the Classy Chassis parade. This is Jeremy's favorite part! He loves the old muscle cars. I enjoy watching myself. I hope to have a few of them in my garage some day. This year I rode in the mini pumper with the kids. They love the mini fire truck. I had the honor of spraying everyone with water. It was fun!
